Creating Gluten Free Oatmeal Cookies – Perfect For Gluten Free Diets

Each year thousands make a major lifestyle change and start to eat gluten-free. The reasons why vary. Some think it’s a healthier way to live while it becomes a necessity for others who have been diagnosed with celiac disease. At first it looks like you can no longer enjoy some of your favorite comfort foods like paste, pizza and cookies. We’ve come a long way since the early days of living gluten free. There are now hundreds of delicious products and thousands of gluten-free recipes out there that allow you to enjoy all your favorite foods – just in a slightly modified way. Here’s one of my favorites, for a delicious gluten free oatmeal cookie.

Gluten Free Oatmeal Cookie Recipe

* 1/2 cup butter or margarine
* 1/2 cup light-brown sugar
* 1/4 cup white sugar
* 1/2 tsp vanilla
* 3/4 cups gluten free flour
* 1/2 tsp baking soda
* dash of table salt
* 1/2 tsp cinnamon
* 1 large egg
* 1/2 tsp xanthan gum
* 1 1/2 cups gluten free oats
* 1/2 cup raisins (or other dried fruit)

Start by preheating your oven to 350F. Soften the butter on the counter so it will be easier to work with. Cream the butter and both the brown and regular sugar with a hand mixer or use your kitchen mixer. Add the vanilla and the egg next and blend again until you have a creamy light yellow colored mixture.

Sift together the flour, soda, salt, cinnamon and gum in another bowl. Give those dry ingredients a good stir, then work it into the egg mixture. Last but not least stir in the oats and raisins until they are well combined.

Line some cookie sheets with parchment paper and drop the cookie batter on, about one tablespoon at a time. You can either use two soup spoons for this or a melon baler.

The cookies will need to bake for about 12 minutes. They will be golden brown when they are done. Allow them to cool first directly on the baking sheet and then on a rack. Store the finished cookies in a zip-lock bag.

This recipe yields two dozen oatmeal cookies.

If you don’t like making a recipe like this from scratch, you can also find delicious cookie mixes in all sorts of different flavors (including peanut butter, chocolate chip and of course oatmeal) at your local health food store and online. They are always a good alternative. You can even find some gluten-free cookies, already baked and everything that taste pretty good.

In other words, there is no reason to give up delicious baked goods when you are living gluten free.

Adults and Children Alike Will Enjoy These Frozen Smoothies For Snack

If you are constantly fighting to get your kids to eat their fruits and vegetables, then this tip is for you. One of the things I love best about summer is all the fresh product that’s available. Getting our children to eat them though can be a different story. Why not make it fun and surprise them with a delicious frozen treat this week that looks suspiciously like a milkshake. No need to tell them that it’s actually full of stuff that’s good for them like fruit, yogurt and milk.

Both fresh and frozen fruits are great in smoothies. We like berries, bananas, pineapples and peaches a lot in ours. Of course you can mix and match just about any fruits. Just toss whatever sounds good to you in the blender. Start with some fruit and flavors that you know your child loves. Got a child who likes strawberries and vanilla ice cream? Make a smoothie from frozen strawberries and vanilla yogurt along with a bit of juice or milk. For chocolate lovers, try blending frozen banana and chocolate milk.

From there, once you have them hooked on smoothies expand their flavor horizon by including various other types of fruit including strawberries, mangoes and various melons. One thing to keep in mind is that kids like their frozen treats sweet. There’s nothing wrong with adding a little sugar or honey to their smoothies.

My daughter’s favorite right now is this strawberry pineapple smoothie recipe, but she also enjoys a yummy banana smoothie or even mango and pineapple ones. Give a few different smoothie recipes a try until you find a favorite for each member of your family.

If your child isn’t big into milk and yogurt, make a smoothie with orange juice instead. Rice, almond and soy milk are good dairy-free alternatives. Once your kids have their smoothies, don’t forget to make one of these healthy frozen treats for yourself. Your body can use those vitamins just as much.

You can even sneak some vegetables into your smoothies. The now famous green smoothie is a good example of that. Start with something simple like adding some carrot juice to your favorite fruit smoothie. Cucumbers, celery and even spinach are other good choices. You may want to skip the milk and yogurt in a smoothie made mostly from vegetables. Just add some apple juice or the likes instead.
