The Difference between Bitter and Sweet Apricot Kernels

Aside from the obvious flavour differences, many are of the opinion that bitter apricot kernels possess a substance of therapeutic value.For bitter kernels contains Amygdalin which usually taste bitter but probably very rich of ingredients that fights cancer cells. The bitterness is famously indicative of this substance, hence the expression, ‘The bitter, the better’. Sweet apricot-kernels on the other hand, though lacking this characteristic, are a good alternative for almonds as a snack or ingredient. However, if it’s the bitter, marzipan qualities you require, bitter apricot kernels are the appropriate option.
